Sourcing risks

What goes wrong when sourcing cocoa butter

Prices have eased from the 2025 peak

A market research estimate puts US cocoa butter at about $9,808 per metric ton in Q2 2026, down 2.45% from Q1, and Germany at about $8,357, down 3.34%. Beans make up roughly 62 to 65% of the delivered cost of butter, so bean moves flow straight into your quote. Treat research averages as a guide and price against live quotes.

Surplus on paper, little visibility on the new season

The ICCO cut its 2024/25 global surplus to 37,000 tonnes, from 75,000 in February and 48,000 in May. Production was 4.733 million tonnes, up 8.5%, and grindings 4.649 million, down 3.3%. The ICCO has withheld its 2025/26 production and grindings figures for now, so ask suppliers how they see the new crop.

Farm-gate prices are rising from a low base

Fairtrade living income reference prices for the coming harvest are GH¢45.40 per kg in Ghana (about $3.95, up 10%) and 1,758 CFA francs per kg in Côte d'Ivoire (about $3.11, up 47%), effective from the start of the season, expected around September or October. Higher farm prices can lift butter premiums for certified lots.

A few grinding hubs, and allocation risk

The Amsterdam and Zaan area in the Netherlands is a major grinding cluster, and grinding has grown in Côte d'Ivoire and Asia. GCB says its Malaysia and Indonesia plants total 250,000 tonnes a year and rank fourth in the world. When processing margins weaken, grinders can cut throughput or favor contracted customers, so spot buyers can be last in line.

Duties and EU deforestation rules

A November 14, 2025 US order exempts cocoa from reciprocal tariffs. The source summary does not say whether cocoa butter is covered, so confirm the duty on your tariff line with your customs broker. For EU sales, the deforestation rule applies to large and medium operators from December 30, 2026 and to micro and small operators from June 30, 2027, with a cut-off date of December 31, 2020.

The most common quality failures

  • Free fatty acids too high. High FFA shortens shelf life and hurts crystallisation. One supplier lists USP-grade butter at 1.0% FFA maximum. Write a maximum FFA and the test method into your spec.
  • Wrong type for the product. Natural butter keeps the cocoa aroma, while deodorized is neutral and preferred for white chocolate. Name the type in the spec so a lot cannot swap between them.
  • Poor melting and crystallisation. Cocoa butter melts over roughly 34 to 38°C, and its crystal behavior sets snap and bloom in chocolate. Specify a melting range and ask for a crystallisation or hardness test on pressed butter.
  • Cosmetic or pharma grade sold into food. Several sellers here also sell cosmetic and pharmaceutical butter, whose specs differ from food grade. Ask for a food-grade statement and a certificate of analysis for every lot.

What makes a cocoa butter supplier the best fit

There is no single best supplier. These are the criteria buyers use to pick the right one for their spec.

  1. Type and process. Choose natural, semi-deodorised or deodorised pressed butter to match the flavor your product needs.
  2. Form and pack size. Match blocks, drops, pails or liquid tanks to your melting equipment and volume.
  3. Certifications. Check organic, Fairtrade, Rainforest Alliance, kosher and halal certificates cover the exact butter you buy.
  4. Spec and certificate of analysis. Get FFA, melting range and micro limits agreed in writing, and a certificate of analysis for each lot.
  5. Origin and traceability. Ask which beans and which plant made the lot, and whether single origin is available.
  6. Lead time, stock location and backup. Get a lead time to your dock, find out whether stock sits in the US, and qualify a second source.

Cocoa butter supplier FAQ

Who are the best cocoa butter suppliers?

It depends on your spec. Buyers usually compare natural or deodorized type, form and pack size, certifications and stock location. Waystation lists 21 suppliers with a dedicated cocoa butter page, including Blommer Chocolate Company, Global Organics and Pronatec.

Is cocoa butter made in the US?

Blommer Chocolate Company says it is the largest and oldest cocoa bean processor in North America, but its cocoa butter page does not name a plant. None of the listed pages state where the butter is pressed, and the other makers listed are headquartered in Europe, Asia, Africa and Peru. Ask which plant made your lot.

Is organic cocoa butter available?

Yes. CocoaSupply, Ecoandino, Global Organics, Hacienda Umbelina, Hummingbird Wholesale, Machu Picchu Foods, ofi, Pronatec, Tradin Organic and Wuxi Huadong state an organic cocoa butter or organic beans. Ask for the organic certificate that covers the lot you are buying.

What are typical lead times for cocoa butter?

None of the listed pages state a lead time. Ask for lead time from order to your dock, and ask whether the grinder will commit volume to you, since contracted customers can be favored when processing margins weaken.

What should I ask a cocoa butter supplier for?

Ask for the type (natural or deodorized), a certificate of analysis with FFA and melting range, a food-grade statement, origin and certification documents, pack size, lead time and stock location.

How we built this list

Waystation started from its supplier discovery results and kept only suppliers whose own website has a page dedicated to cocoa butter. Table entries are what each supplier states on its own site as of November 2026; "Not stated" means it doesn't say. Manufacturer means the supplier says it makes cocoa butter, brand means it sells under its own consumer brand, distributor covers the rest. Listed alphabetically, no paid placement, not an endorsement. Corrections: info@waystationai.com.
