What goes wrong when sourcing date paste
Where the crop comes from
Egypt, Saudi Arabia, Algeria and Iran grow 57% of the world's dates; California grows about 85% of US dates, nearly all in the Coachella Valley. 9 of the 10 suppliers here that name a variety use Deglet Noor, the main export date of Tunisia and Algeria.
Iranian origin
US law bars importing anything of Iranian origin (31 CFR 560.201), including Iranian dates packed or shipped through another country. Ask for documents showing where the fruit was grown, not only where it was processed.
Harvest timing
Deglet Noor is picked from October to December in Tunisia and California, and new-crop paste follows. Tunisian stocks have run nearly dry before the next crop, so lock the year's volume soon after harvest.
Lead times
Ocean freight from the UAE to the US East Coast takes roughly 25 to 35 days port to port, before customs. 10 of the 23 suppliers here say they ship from US stock. Ask for lead time from order to your dock.

- Pit fragments. FDA acts on macerated date material averaging 2 or more pits or fragments of 2 mm+ per 900 g; supplier specs run as tight as 1 per 2,000 lb. Pits aren't metal, so ask what detects them
- Insects. Date moths infest fruit in the field and in storage; FDA acts at an average of 5 dead insects per 100 g
- Fermentation, yeast and mold. Paste runs about 20 to 24% moisture; wetter lots ferment. Get moisture, water activity and yeast and mold limits on every CoA
- Darkening. Paste darkens in warm storage. One US maker gives 6 months refrigerated, 1 year frozen

What makes a date paste supplier the best fit
There is no single best supplier. These are the criteria buyers use to pick the right one for their spec.
- Date variety and origin. Know which variety and which country the fruit comes from, backed by origin documents, not just the processor's address
- Pit fragment control. Get the pit fragment limit written into the spec, plus the detection method
- Moisture and Brix consistency. Get guaranteed ranges for moisture, water activity and Brix, and a CoA for every lot that shows them
- Food safety certification. Look for a GFSI-benchmarked scheme (SQF, BRCGS, FSSC 22000 or PrimusGFS) that covers the site where the paste is made
- Organic, kosher and halal status. If your label needs it, check the certificate covers the paste and the processor, not just the company
- Pack sizes and lead time. Match the pack (pails, cartons, drums or totes) to your line, and get a lead time from order to your dock
