What goes wrong when sourcing xanthan gum
A few large plants, mostly in China
Big Chinese fermenters such as Fufeng, Meihua and Deosen are major producers. Fufeng calls itself the largest xanthan maker in the world. In the US, Tate & Lyle makes xanthan gum at its Okmulgee, Oklahoma plant. Distributors often resell the same few plants, so ask which plant made your lot.
Duties on Chinese xanthan gum
A US antidumping order has covered xanthan gum from China since 2013 and was renewed in 2024. Current deposit rates are 38.62% for Fufeng, 35.61% for Meihua, 22.57% for Deosen and 154.07% for other Chinese sellers. A 2026 preliminary review would raise Fufeng to 51.82% and Deosen to 70.21%. Section 301 adds 25% on top of the 5.8% normal duty. Check landed cost with your customs broker.
What it is fermented from
Xanthan gum is made by fermenting sugars such as glucose or sucrose. One Chinese maker's flow chart lists corn starch and soy protein as inputs. If your label says gluten-free, FDA requires records showing fermented ingredients were gluten-free before fermentation. Get substrate, allergen and GMO statements for each plant.
Price swings
In early 2022 Fufeng's xanthan selling price rose 61.5% from a year before, and it called the market short of supply, driven by oilfield demand. Ask for lead time from order to your dock and qualify a second plant.
The most common quality failures
- Low viscosity. US rules require at least 600 cP for a 1% solution in 1% potassium chloride at 75°F. Write your own viscosity range and test method into the spec
- Lumps and slow hydration. Finer powder thickens faster but clumps more easily when added to water. Match the mesh or a dispersible grade to your mixer
- Residual alcohol. Xanthan is recovered with alcohol. US rules allow up to 750 ppm isopropyl alcohol; the JECFA limit is 500 mg/kg for ethanol and isopropanol combined
- Microbes and lead. JECFA limits are 5,000 cfu/g total plate count, 500 cfu/g yeast and mold, no E. coli or Salmonella, and 2 mg/kg lead. US rules also require no live Xanthomonas cells

What makes a xanthan gum supplier the best fit
There is no single best supplier. These are the criteria buyers use to pick the right one for their spec.
- Plant and country of manufacture. Know which plant made the gum, not just who sells it, and what duties apply to that country
- Viscosity and mesh. Get a viscosity range, test method and mesh size that fit your process and mixer
- Certificate of analysis. Get a CoA for every lot with viscosity, loss on drying, residual alcohol, lead and micro results
- Food safety certification. Look for a GFSI-benchmarked scheme (FSSC 22000, BRCGS or SQF) that covers the plant where the gum is made
- Substrate, allergen and label claims. Get the fermentation substrate, allergen, GMO and gluten statements, plus kosher or halal certificates if your label needs them
- Pack size, lead time and backup. Match the pack to your line, get a lead time from order to your dock, and qualify a second source
Xanthan gum supplier FAQ
Who are the best xanthan gum suppliers?
It depends on your spec. Buyers usually compare the plant and country of manufacture, viscosity and mesh, food safety certification and duty exposure. Waystation lists 12 suppliers with a dedicated xanthan gum page, including Colony Gums, Jungbunzlauer and Tate & Lyle.
Is xanthan gum made in the US?
Yes. Tate & Lyle says its Okmulgee, Oklahoma plant makes xanthan gum for food and pharmaceutical use. The other makers listed here produce in China and Austria.
Is there a tariff on xanthan gum from China?
Yes. An antidumping order has applied since 2013, with 2026 deposit rates from 22.57% to 154.07% depending on the producer. Section 301 adds 25% on top of the 5.8% normal duty.
What is the difference between 80 mesh and 200 mesh xanthan gum?
200 mesh is a finer powder. It thickens faster but clumps more easily when added to water. 80 mesh is coarser and disperses more easily. Dispersible and agglomerated grades help with lumping.
What should a xanthan gum certificate of analysis include?
Viscosity (1% in 1% KCl), loss on drying, pyruvic acid, residual ethanol or isopropanol, lead, and microbiology: total plate count, yeast and mold, E. coli and Salmonella, each against your spec.

Waystation started from its supplier discovery results and kept only suppliers whose own website has a page dedicated to xanthan gum. Table entries are what each supplier states on its own site as of October 2026; "Not stated" means it doesn't say. Manufacturer means the supplier says it makes the gum, brand means it sells under its own consumer brand, distributor covers the rest. Listed alphabetically, no paid placement, not an endorsement.
