Sourcing risks
What goes wrong when sourcing dried egg white
Bird flu
Bird flu (HPAI) has hit US flocks since February 2022. By April 2025 it had affected about 169 million birds, and egg-laying hens were 75% of the losses. Farm-level egg prices rose 163% in 2022, 43% in 2024 and 32% in 2025, then fell to 75% below a year earlier by September 2026. Ask how a supplier covers your volume if a source farm is hit.
No public price
USDA's weekly egg market report had too few dried egg trades to publish a price in late October 2026. That week, breakers processed 32.3% of US table egg production. With no public benchmark, get quotes from more than one supplier and agree in writing how the price will move.
Limited imports
Egg products can enter the US only from countries USDA FSIS rates as equivalent: Canada, the Netherlands and Lithuania. Only plants on FSIS lists can ship, and every lot is reinspected at the port. FSIS delisted all nine Dutch egg plants in January 2025, and its July 2025 Lithuania list names one plant. Check the plant is listed before you buy.
Cage-free supply
About 151.6 million US hens were cage-free in September 2026, and cage-free eggs made up 42% of eggs processed in the week to October 23, 2026. If your label or customers need cage-free, write it into the spec and get the certificate for the farms behind the powder.
The most common quality failures
- Salmonella. Dried whites are not pasteurized as a liquid. They are heat-treated after drying, in closed boxes in a hot room. FSIS estimates 13 to 26 days at 129°F depending on moisture; the old rule was 130°F for 7 days. Plants must test heat-treated whites for Salmonella. Ask for the validated hot-room time and a negative Salmonella result per lot
- Sugar left in the powder. US rules require the glucose in egg whites to be reduced before drying, by enzyme, yeast or bacteria. Glucose left in the powder hurts its storage stability and function. Ask which method the supplier uses
- Wrong whip or gel. Standard, high-whip, high-gel and instant whites behave differently. High-whip whites may contain sodium lauryl sulfate, up to 1,000 ppm in egg white solids, which goes on your label. Put whip or gel results and the test method in the spec
- Moisture. The US standard for dried egg whites sets no moisture limit, and starting moisture changes how long the hot room takes. Set a moisture maximum and get the value on every CoA

What makes a dried egg white supplier the best fit
There is no single best supplier. These are the criteria buyers use to pick the right one for their spec.
- Type and grade. Name the grade (standard, high-whip, high-gel or instant) and get whip or gel results in the spec, with the test method
- Heat treatment and Salmonella. Get the validated hot-room time and temperature, and a negative Salmonella result on every lot's CoA
- Moisture and desugaring. Get a moisture maximum and ask how glucose is removed, since the US standard sets no moisture limit
- Food safety certification. Look for a GFSI-benchmarked scheme (SQF, BRCGS or FSSC 22000) that covers the site where the whites are dried
- Cage-free, organic, kosher and halal status. If your label needs it, check the certificate covers the powder and the farms or plant behind it, not just the company
- Supply, pack size and lead time. Ask where the eggs come from and how volume is covered during a bird flu outbreak. Match the pack to your line and get a lead time to your dock
Dried egg white supplier FAQ
Who are the best dried egg white suppliers?
It depends on your spec. Buyers usually compare grade (standard, high-whip or high-gel), heat treatment, food safety certification, cage-free or organic status and pack size. Waystation lists 9 suppliers with a dedicated dried egg white page, including Eggs Unlimited, Michael Foods (Papetti's) and Oskaloosa Food Products.
Which dried egg white suppliers offer organic dried egg whites?
2 of the 9 suppliers say they offer organic dried egg whites: Eggs Unlimited and Groward Group (Baltic Egg Production). Check the certificate covers the powder and the farms behind it.
Are there US-made dried egg whites?
Yes. Oskaloosa Food Products makes dried egg whites in Iowa, and Michael Foods owns Henningsen Foods, which makes dehydrated eggs at three Nebraska plants. Modernist Pantry also says its powder is made in the US.
How are dried egg whites made safe?
Most are dried first, then heat-treated in closed boxes in a hot room until Salmonella can't be detected. USDA FSIS estimates 13 to 26 days at 129°F, depending on moisture. Plants must test heat-treated whites for Salmonella.
What should a dried egg white certificate of analysis include?
Moisture, pH, protein, whip or gel results for your grade, and microbiology: Salmonella (negative), total plate count, coliforms, E. coli, and yeast and mold, each against your spec.

Rate a supplierHow we built this list
Waystation started from its supplier discovery results and kept only suppliers whose own website has a page dedicated to dried egg whites. Liquid and frozen egg whites are not covered. Table entries are what each supplier states on its own site as of October 2026; "Not stated" means it doesn't say. Manufacturer means the supplier says it makes the dried whites, brand means it sells under its own consumer brand, distributor covers the rest. Listed alphabetically, no paid placement, not an endorsement. Corrections: info@waystationai.com.
